Hiroyasu Kayama farms wormwood and other botanicals outside Tokyo and distills in-house, which means the absinthe in your glass has a field attached to it. There is a mortar and pestle on the bar and it gets used.
Ask for something with his own vermouth. Expect it to take a while.
