Gen Yamamoto serves flights of four or six small drinks built around whatever produce arrived that morning. Most are lower in alcohol than a glass of wine and none are sweet.
Eight seats, one seating at a time, no substitutions. It is the strongest argument in this publication that low-ABV is a discipline rather than a concession.
